What's Cooking? Escabeche

Here is a quick photo essay of a cooking lesson I got last week.  My CHW, Mrs. Justina, showed me how to prepare a local chicken.  She was shocked when I said I had never slaughtered one myself. So, we did.  Then, we made Escabeche, which in Belize means a Onion-Chicken soup.  It was delicious. Here's  a recipe if you want to know more!
