My genius work partner at the school, Mrs. Chan, the principal, had the brilliant idea to prepare a healthy snack with some of our goods from the garden. We decided on cerviche so we could use cilantro and tomatoes that we grew. The kids each chipped in $1 BZD ($0.50 USD) to help cover the other ingredients for the dish.
Here is the recipe we used!
- About half a pound of boiled shrimp
- 2 cups diced ripe tomatoes
- 1 large onion diced
- 1 bunch cilantro chopped
- 1 habaƱero pepper minced (more or less to taste)
- Juice from 5 limes
- 1 tsp salt (to taste)
Simply toss everything together, and enjoy with fresh tortilla chips!

P.S. Try not to tear up when you bite into a huge chunk of habaƱero because the children must know YOU ARE NOT A WHIMP.
